Lasagne & Chocolate Fondue (Villahermosa, Tabasco, Mexico)

I had forgotten how good lasagna is. I can’t even remember the last time we’ve had that wonderfully delicious food.

Jorge and Alejandra have been following our journey for a while and, as soon as they found out we would be passing through Villahermosa, they invited us to stay with them. And what a treat this is – in more ways than one!

John and I have enjoyed conversation where John can actually join in – the family speaks English! It’s been fun hearing their tales of life in Mexico. Davy and Daryl hit it off immediately with their two boys – Fer and Ricky. The four of them spent a delightful afternoon splashing in the neighborhood swimming pool and playing on the PlayStation. All four of us have enjoyed being in an air-conditioned environment to get a break from the extreme heat and humidity outside.

And we really, really enjoyed lasagna for dinner! After the lasagna, they brought out fruit with chocolate fondue. Oh my – did we get hit by a car and end up in heaven?

After 21 years as a classroom teacher, Nancy Sathre-Vogel finally woke up and realized that life was too short to spend it all with other people's kids. She and her husband quit their jobs and, together with their twin sons, climbed aboard bicycles to see the world.
